Since its inception, the cooperative has been committed to quality production, environmental preservation and community development. 20% of CECANOR's members are women, and a woman represents the cooperative on Peru's National Coffee Board.

The cooperative purchased new computers and furniture for their office with Fair Trade funds

Women's Programs

The co-op has implemented multiple women-led projects with the help of the Women of the Americas Coffee Foundation (Fundación Americana de Café Femenino) such as planting gardens, raising animals and improving kitchens. The organization used Fair Trade premium funds to provide women with the technical assistance and training necessary for the completion of these community development projects

Community Investment

In 2007 Christmas cake and milk was distributed to all members and children

SWISS WATER® Process

The 100% chemical free SWISS WATER® Process begins by soaking high quality green coffee beans in pure clean water to create "flavour-charged water".

This step occurs only once and these original beans are then discarded. The flavour-charged water is then run through a carbon filter, which traps only the caffeine molecules in the carbon's pores. Next the flavour-charged water, now decaffeinated, is circulated over the green coffee beans and the caffeine, not the flavour, naturally flows out of the beans - simple diffusion. Because the water is already saturated with flavour components, any possible flavour cross over or removal that might occur is held to an absolute minimum.

This is why the SWISS WATER® Process maintains coffee flavour and complexity so accurately without adding foreign "process" flavours to the coffees. The flavour-charged water is again run through the carbon filters to remove the caffeine.

This process is continued until 97% of the caffeine has been removed. The coffee is then dried and returned to its original bags. This unique and patented decaffeinating process maintains the coffees' distinct origin characteristics. As one of the only decaffeinating processes in the world with organic certification, the SWISS WATER® Process signifies health, great taste and quality.
